Where can I find lots of sit-n-go’s and tournaments for different poker variations?

I play on Poker Stars and Pacific Poker. Pacific Poker has a nice variety of tournaments, only problem is, they are ALL Texas Hold Em. Poker Stars, on the other hand, holds razz, 2-7 Triple Draw, 5 Card Draw, Omaha, Omaha Hi/Lo, 7 Card Stud, 7 Card Stud Hi/Lo, HORSE and SHOE. While they have an excellent variety, there’s not a lot of quantity of each of these tournaments and sit-n-go’s. Are there any sites where these or other poker variations are held and have decent traffic?
Poker Stars has an immense volume, I agree. But I’ve never seen an Omaha sit-n-go fill up (granted, they only offer 45 seaters), not to mention a Razz, 7 Card Stud or HORSE sit-n-go.
I’ve sat waiting for a low buy-in Omaha sit-n-go to fill up for 3 hours. It got about 6 players by the time I called it quits and went to bed.
I checked Ultimate Bet. They offer fewer variations and fewer tables, but yes, they do offer Omaha, Omaha hi/lo, 7 Card Stud and 7 Card Stud hi/lo.

I was playing a heads up table on Full Tilt Poker 5/10 Stud. After observing a player play a couple people he seemed like a tight player. I sat down with a 100 and he switched his money to a 100 to match mine, as I’ve found conventional for a fair heads up match. After only about 3 hands im dealt two random cards with an ace up, and he has a random low card showing. I decide to complete the bet in order to show strength and he raises and I call. The next card for me is a K, and he has another random card unsuited. I then bet and he calls. Next card was a J, and he gets yet again another random card, I try to push him out again with another bet and he just calls. This goes on while I have all high cards showing until the 7th street, when I bet yet again and get a call. He shows one pair 3’s in his hidden initial pocket, and takes down the pot.
Was this smart for him to keep calling with no drawing cards and high cards showing on my hand, or does it seem as if he was merely
fishing and trying to get lucky, and felt too pot committed?
no there was no draw on his board.
